Artichoke Omelet Recipe 

3 cooked artichoke hearts chopped
3 eggs
1/2 glove chopped sauteed garlic
2 tablespoons sauteed diced onion
1 tablespoon butter

Add butter to hot skillet.  Add all ingredients to large bowl and beat until well mixed.  pour mixture into hot buttered pan and cook for 3 minutes over medium heat.  When edges of omelet get firm then fold omelet.  Flip omelet and cook for one minute on other side.  Season to taste and serve.
