1 large pumpkin 1/2 cup butter 1/2 cup sugar 1 tablespoon cinnamon
Divide pumpkin into 8 pieces and place in large cooking pan. Bake at 425 degrees for 45 minutes or until pumpkin meat is tender. Remove pumpkin from pan and use a knife to cut the flesh away from the skin. In a pan on the stove top, mix the pumpkin flesh, butter, sugar, and cinnamon. use a mashing motion to make the baked pumpkin smooth and creamy. If pumpkin is lumpy, you can add 1/2 cup milk and beat with an electric mixer. Serve either hot or chilled. Everyone loves this recipe. |
