3/4 lb beef tenderloin 1 cup sliced mushrooms 1 tbsp olive oil 1 tbsp minced garlic 1/2 chopped onion 1/2 cup chopped tomato
Heat oil in a cast iron skillet . Slice beef tenderloin into 4 to 6 thin slices. Sear sliced tenderloin for two minutes on each side. Remove from skillet and keep warm. Toss all other ingredients into skillet and cook until tender. Layer mushrooms, onions and tomatoes over top of sliced beef tenderloin. Season with salt and pepper. |
