2 large green bell peppers 1 cup sliced mixed red and yellow bell peppers cooked 1/2 cup cheddar cheese 4 strips cooked bacon 2 tablespoons olive oil
Slice green bell peppers in half and remove seeds. Paint insides of peppers with olive oil using a pastry brush. Place in a 350 degree oven for 10 minutes. Remove when tender. Place cooked mixed peppers inside green peppers, top with a slice of crisp bacon, and shredded cheddar cheese. Return to oven for 5 more minutes and then allow to cool before serving. Makes four bell pepper boats. |
