Blue Ribbon Carrot Cake Recipe 

2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
3 eggs
2 cups sugar
3/4 cup oil
3/4 cup buttermilk
2 teaspoon vanilla extract
1 cup pineapple chunks
2 cups carrots, grated
1 cup chopped walnuts
1 cup coconut

Sift flour, baking soda, cinnamon and salt together.  In a separate bowl beat eggs and sugar together.  Add in other ingredients and combine with first mix of dry ingredients.  Bake in a 13 inch x 9 inch floured cake pan.  Bake at 350 degrees for about 60 minutes.
