1 large eggplant 1 egg 1 cup cracker crumbs 1/4 cup butter 1 teaspoon salt Dash pepper
Peel eggplant and cut into 1/4 inch slices. Add salt and pepper to season. Dip in beaten egg. Dip in cracker crumbs. Place in buttered dish and pour extra butter on top of eggplant slices. Bake at 400 degrees for 35 to 45 minutes. Serve topped with any kind of cheese. |
