1 pound round steak 1 cup chopped onions 1/2 cup chopped bell pepper 1/2 cup white rice 2 1/2 cups cooked tomatoes (canned) 2 cups hot water 1/4 cup flour 1/4 cup shortening 1 teaspoon salt 2 teaspoons paprika Black pepper to taste
Mix flour and spices in a shallow dish. Heat shortening in frying pan. Cook peppers and onions in hot shortening until tender. Dredge steak in flour mixture and fry in melted shortening until brown on both sides. Drain off excess shortening and combine vegetables, meat, and rice with hot water in pan. Cook over medium heat on stove top for 45 to 55 minutes or until well done. |
