3 eggs 1 tablespoon milk 2 tablespoons butter 1 small can stewed tomato 1/2 cup shredded cheese of your choice 1 teaspoon sugar Salt and Pepper
Combine canned tomato and sugar in a sauce pan and cook over medium heat for about 10 minutes. Tomato mixture will become concentrated. Heat butter in a hot skillet until melted. Mix eggs and milk and pour mixture into hot skillet. Cook omelet until edges are firm and no longer runny in the middle. Remove from pan and place on warm plate. Pour heated tomato mixture over omelet. Top with shredded cheese. Heat under a broiler for about a minute to melt and brown the cheese. Salt and pepper to you liking and serve. |
