1/2 onion finely diced 1 tomato chopped 1 hot pepper chopped finely 1/3 teaspoon paprika 1/2 tablespoon vegetable oil 3 eggs 1 tablespoon butter salt pepper
Combine all ingredients except eggs and butter and cook in pan until tender. Remove from pan and set aside. Add butter to hot pan and then add beaten eggs. Cook for 2 to 3 minutes. Add half of vegetable mixture to center of omelet and then fold. Serve omelet topped with other half of warmed vegetable mixture. Season to taste. |
