4 pound duck cut into pieces Salt and Pepper 1 cup flour 1/4 cup oil for pan frying 1/2 teaspoon crushed bay leaf 2 tbsp. minced onion 1 tsp. minced garlic
Heat oil in a deep cast iron frying pan. Season duck pieces with salt and pepper. Dredge duck in flour. Pan fry with bay leaf, garlic and onion in hot oil. Brown both sides. Reduce heat and cover duck pieces with hot water. Cover pan and cook until duck is tender and done. |
