Diabetic Angelfood Cake Recipe 

Sugar substitute equal to 1 3/4 cups sugar
10 egg whites
1 cup flour
1 1/2 teaspoons cream of tartar
1 teaspoon vanilla

Combine and sift flour and sugar substitute.  Beat egg whites, cream of tartar and vanilla extract together to form peaks.  Gradually fold both sets of ingredients together.  You have to do this gently or cake will be more dense than fluffy.  Bake cake in an appropriate circular pan at 350 degrees for 35 to 45 minutes.  Cake should be springy and light when done.
