Diabetic Apple Jelly Recipe 

2 cups apple juice or cider (unsweetened)
2 packages gelatin (unflavored)
2 tablespoons lemon juice
Your choice of artificial sweetener to taste

Bring apple juice to a near boil in a saucepan on the stove.  Remove from heat and stir in unflavored gelatin.  Also stir in lemon juice.  Return to stove burner and bring to a rolling boil for one to two minutes.  Remove from heat and stir in artificial sweetener to taste.  Pack into hot sterilized jars and process in a water bath for 10 to 15 minutes.  Yields one pint.
