Diabetic Coffee Cake Recipe 

2 cups flour
3 teaspoons baking powder
1/3 cup margarine
1 egg
1/4 cup milk
1/2 cup cold coffee
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
Sugar substitute to equal 1 cup sugar

Combine dry ingredients together in a large mixing bowl.  Fold in margarine.  Beat egg and mix with all liquid ingredients.  Mix both sets of ingredients and beat by hand until batter is creamy.  Pour your cake batter into either 2 eight inch greased pans or one larger 13 x 9 inch pan.  Bake this cake for 30 minutes at 325 degrees.  Cake should have spring back when you press down on the center.
