1 large eggplant 1 egg 2 tablespoons flour 1/2 teaspoon salt Black pepper Oil for frying
Peel eggplant and cook until soft. mash eggplant and use three cups of cooked eggplant for this recipe. Mix the mashed eggplant, flour, salt, egg and dash of pepper together. Form into small patties. Fry in hot oil until brown. Drain on absorbent paper towels before serving to remove excess oil. |
