Fried Summer Squash Recipe 

2 pounds squash
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup cornmeal
1/2 cup flour
1/2 teaspoon chili powder
2 eggs

Wash and slice squash into 3/8 inch slices and set aside.  Combine all dry ingredients in a shallow dish to form breading.  Beat two eggs and place in separate dish.  Dip squash slices into egg and then into breading.  Fry squash in hot oil for 2 minutes and then turn and fry one more minute.  Serve with salt and pepper to taste.
