3 cups cooked, cubed chicken breast 2 medium cucumbers, peeled, seeded and chopped 1 1/4 cups crumbled feta cheese 2/3 cup sliced black olives 1/4 cup parsley 1 cup mayonnaise 3 cloves garlic, minced 1/2 cup plain yogurt 1 tbsp dried oregano Boston Lettuce
In a large bowl combine chicken, cucumbers, feta cheese, olives and parsley, set aside. In another bowl, combine mayonnaise, garlic, yogurt, oregano, add to chicken mixture. toss mixture gently until coated. Cover and chill. Serve on Boston Lettuce. |
