Help with Runny Jelly
If, after processing your homemade jelly, you find that it is too runny, don't despair because it can be fixed. Use these steps to help fix home canned runny jelly.
1. Inspect each jar of jelly one at a time to see if it is runny and needs to be fixed. 2. For each pint of jelly you will need the following ingredients: * 1/8 cup granulated sugar * 1/4 cup water * 1 tablespoon lemon juice * 2 teaspoons powdered pectin 3. Dump one (pint) jar of runny jelly into a medium sized saucepan and stir in necessary ingredients. 4. Bring this mixture to a rolling boil and keep there for at least 1 minute. 5. Repack jelly in clean, sterilized jars with new lids. 6. Reprocess as you had before in a water bath canner.
Now you can continue and process any other jars of runny jelly that you may have. The answer to fixing runny jelly in the future is adding more pectin at the start and, or boiling the jelly for at least one full minute before packing in jars.
