4 ounces cod, cubed 2 tsp. vegetable oil 1 cup onion, chopped 2 cans diced tomato with onions and peppers 1 small can spicy vegetable or tomato juice 1 1/2 cups drained corn
Sauté onion in oil. Stir in other vegetables and juices. Bring to a steady boil and cook for one minute, stirring occasionally. Reduce heat , simmer an additional 5 minutes, stir in cubed cod and cook for 5 more minutes. Salt and pepper to taste. |
