1/4 stick butter or margarine 2 eggs 1 cup milk 1 16 oz. can whole kernel corn 10-15 pickled jalapeno pepper slices, diced finely 1 cup cornmeal 1 teaspoon salt 1/2 teaspoon baking soda
Cheese, or sauteed onions or bacon can be include to enhance this recipe. Use a cast iron skillet to melt butter. Make sure all edges and bottom of pan are coated so cornbread won’t stick. Mix all ingredients in a large bowl and add any of the melted butter that is left over. Bake at 350 degrees F for 40 to 50 minutes. Check center of jalapeno cornbread by sticking knife into it. If knife comes out clean, then remove and let cool. |
