Mexican Corn Bread Recipe 

1 1/2 cups cornmeal
1/2 cup flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup shredded cheddar cheese
3 chopped and seeded jalapeno peppers
2  eggs
1 1/2 cups milk
1/4 cup butter
 
Mix all dry ingredients together well in a large mixing bowl.  Beat eggs and milk together and pour into dry ingredients.  Add cheese and peppers and mix thoroughly.  Pour into buttered cast iron skillet.  Bake at 400 degrees for 30 minutes.  Check corn bread center with knife to see if it is done.  You can move bread under oven broiler for a couple of minutes to brown top if desired.  Top with melted butter.
