Mexican Flan Recipe 

4 eggs
3 cups milk
1/2 cup sugar
1/4 teaspoon vanilla
1 tablespoon gelatin
1/4 teaspoon salt

Mix one cup of milk and the gelatin and set aside.  Heat the remaining milk to almost boiling.  Mix the heated milk with the milk and gelatin mixture.  Separate eggs and reserve the whites.  Beat egg yolks until fluffy and add milk mixture a little at a time until all is mixed in.  Heat this on the stove until it thickens enough to start sticking to a metal spoon.  Add the vanilla and salt and stir.  Remove from heat and chill in refrigerator for one hour.  Beat egg whites for one minute and then fold into chilled custard.  Serve warm or chilled.
