6 slices bacon 2 two lb. chicken fryers cut up 1/2 cup all purpose flour 2 teaspoon salt 1/4 teaspoon pepper 1 cup chopped onion 1 clove garlic minced 1 small can whole mushrooms 2 one pound cans tomatoes 1/4 cup chopped parsley 1 cup croutons
Fry bacon until crisp in large frying pan. Remove bacon and save. Shake chicken in flour, salt, and pepper in paper bag to coat well. Save left over flour. Brown chicken ( a few pieces at a time) in bacon drippings. Place in 12 cup shallow baking dish. Sauté onion and garlic until soft. Stir in left over flour. Stir liquid from mushrooms, tomatoes, and parsley. Heat to boiling, stirring constantly. Spoon mixture over chicken pieces. Cover. Bake at 350 degrees for 1 hour and 20 minutes. Uncover and sprinkle crumbled bacon and mushrooms on chicken. bake 10 minutes more. Add croutons just before serving. |
