Roasted Guinea Hen Recipe 

1 average size guinea hen (3 lbs.)
4 ounces salt pork cut in strips
Salt
Pepper

Pre-heat oven to 350 degrees.  Clean inside of hen by rinsing cavity well with water.  Place two strips of salt pork inside guinea hen.  Use salt and pepper as desired to season exterior of bird.  Place the guinea hen breast side down in a roasting pan.  Cover exposed part of guinea with strips of salt pork.  Roast hen in 350 degree oven for one hour.  Remove from oven and place opposite down into bottom of roaster.  Replace salt pork strips on top of breast.  Return guinea hen to oven for another hour.  Check breast meat with a meat thermometer for doneness (170 degrees) before serving.
