Soy Muffins Recipe 

1 cup soy flour
1 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon salt
1/4 cup sugar
3/4 cup milk or soy milk
1 egg
1 tablespoon butter

Pre-heat oven to 400 degrees.  Beat butter, eggs and milk together and set aside.  Mix dry ingredients together in a bowl.  Mix both sets of ingredients and stir gently.  Batter should be lumpy.  Bake for 18 to 20 minutes.
