1/4 cup diced onion 1 tablespoon butter 1 cup diced canned potatoes 3 eggs
Place butter in a hot skillet and allow to melt and cover the bottom of the skillet. Beat egg mixture and pour into hot pan. Allow eggs to cook for 1 to 2 minutes and until firm. Place diced onions and potatoes in center of egg mixture and fold over. Allow to cook for 30 seconds to heat vegetables. Flip omelet and brown both sides. Salt and pepper to your liking. Serve warm with slices of lime as a garnish. |
