Stuffed Zucchini Recipe 

2 large zucchini
1/8 cup minced onion
1/8 cup butter or margarine
1 cup fresh soft bread crumbs
1/2 cup chopped stewed tomato
Dash Salt
Pepper to taste

Cook zucchini in water until tender, about 10 minutes.  Halve zucchini and remove meat from center.  Mix zucchini meat with tomato, bread crumbs, onion and all other ingredients.  Make a mashed paste of the mixture and fill the empty zucchini shells.  Bake at 350 degrees for 15 minutes.  Serve topped with cheese.
