1 split chicken breast 2 cups chopped broccoli 1/2 cup chopped onion 1/2 cup chopped celery 3 cups chicken broth 3/4 cup hot water 1 teaspoon lemon juice 1/4 teaspoon dried thyme Dash pepper 1 cup cored and chopped tomatoes
Combine chicken, onion, water and celery in a saucepan over medium heat. Bring to a boil and then reduce heat to a simmer. Cover and cook for 20 minutes. Remove chicken and discard bones and skin. Return chicken meat to pan. Stir in broccoli, thyme, pepper and lemon juice. Bring mixture to boiling. Reduce heat to low. Cover and cook for 2 to 3 minutes at a simmer. Stir in chopped tomatoes. Simmer covered for an additional 5 minutes. |
