Vegetable Tea Sandwich Recipe 

3 tomatoes, peeled and cored
1/2 bunch celery, finely chopped
1 cucumber, seeded and chopped
1/2 onion, finely chopped
1 red or green bell pepper, seeded and chopped
2 tbsp mayonnaise
1 tsp salt

Combine all vegetables in a colander.  Sprinkle with 1 tsp salt to draw out excess water.  Mix chopped veggies with mayonnaise and spread on your favorite bread.
