Wild Goose Recipe 

1 large wild goose
Salt and pepper
1 tablespoon vinegar
1 sliced onion
1 cup flour

Clean goose well and make sure to remove any excess fat from the goose prior to cooking.  Rub exterior of wild goose with salt, pepper and vinegar.  Place sliced onion inside the goose's cavity.  Sprinkle flour onto gooses skin just prior to cooking.  Roast wild goose in a 325 degree oven for 20 to 25 minutes a pound.  Baste goose while cooking with melted butter and juices from pan.
