2 large zucchini 1/4 cup chopped onion 3 tablespoons olive oil 2 cups stewed tomatoes Dash Salt Dash pepper 1/2 cup Cheddar cheese shredded
Sauté 1/4 inch thick zucchini slices and onion in pan with olive oil. Add salt and pepper to taste and cook for about 10 minutes. Place cooked zucchini in an oiled baking dish and top with stewed tomatoes and cheese. Bake at 375 degrees for 20 minutes uncovered. Serve. |
