3 cups zucchini, shredded 2/3 cup vegetable shortening 3 cups sugar 4 eggs 3 1/3 cups self rising flour 1 teaspoon cinnamon 1 teaspoon ground cloves 2 teaspoons vanilla
Pre-heat oven to 350 degrees. Blend shortening and sugar together in a large mixing bowl. Mix in dry ingredients to form a smooth batter. Stir in shreeded zucchini. Pour zucchini bread batter into 3 loaf pans and bake at 350 degrees for 60 to 70 minutes. Cool zucchini bread completely before cutting. |
